      <image:title>Community/Wellness - Community Project</image:title>
<image:caption>This is a presentation compiled by a couple classmates and I, which outlines a project that could be implemented in an area of the United States that is a food desert whose population consists of a different ethnicity than our own. Our project focused on Little Haiti in Miami, FL, and our idea was to implement a food subscription box, much like Hello Fresh, but cater it to the Haitian population, using culturally appropriate recipes which are written in Creole and English. Our boxes could also be purchased with SNAP benefits, making it available for low income households in the community.</image:caption>

<image:caption>This project was inspired by my time working at Walt Disney World, and how they’ve developed processes to handle guests who dine at their restaurants with food allergies or intolerances. My policy suggests that more restaurants adopt similar policies and procedures to make restaurant guests with food allergies feel more safe about eating at that restaurant, and the staff feels confident that the food they serving.</image:caption>

<image:caption>The video was made for a sports dietitian who works with high school and college athletes, but it is appropriate for anyone who is unfamiliar with tofu and wants to add this excellent source of plant-based protein to their diet! I talk about extra firm/firm tofu, silken tofu, and tempeh and all the different ways they can be prepared.</image:caption>

      <image:title>About me - Sam I Am</image:title>
<image:caption>Pursuing a career in nutrition has been a goal of mine since my senior year of high school, when I decided to teach myself how to cook healthy meals in preparations for going off to college. After high school, I wanted to sharpen my cooking skills even further, so I obtained my Associates degree in culinary arts from Le Cordon Bleu in Mendota Heights, MN. Upon finishing my degree, I accepted an externship at Walt Disney World in Orlando, FL. This led to a full-time position as a cook 1 at Disney’s Boardwalk Resort. I spent the next few years learning the ropes of the kitchen. I became a trainer, learned how to work every station, and had the opportunity to be part of an opening team for a new restaurant. After I got some job experience under my belt, I decided to return to school to pursue dietetics, and officially begin my journey to become a Registered Dietitian. I graduated with my Bachelor’s degree from the University of Florida, and accepted an internship through Andrew’s University in Michigan. I completed my food service, community, and clinical rotations in the Central Florida area. Now at the conclusion of my internship, I couldn’t be more excited about using the skills I’ve obtained thus far to help others with their nutrition goals.</image:caption>
